THE KOJI FERMENTERIA MISO WORKSHOP WITH HARUKO UCHISHIBA

We are excited to welcome NiMi Loft in Sevenoaks Haruko Uchishiba of The Koji Fermenteria and her fabulous miso-making workshop!

Haruko is a koji specialist based in London, trained under Nakaji, the author of "Koji for Life." Her approach to koji cultivation is deeply rooted in traditional Japanese methods.
From her North London home, she hosts a variety of koji-related workshops, including those on miso and shoyu. Her past students include renowned chefs such as Tom Aikens, Yann Florio, Olia Hercules and Sam Cooper.
Haruko is passionate about integrating koji into global food culture, aspiring for it to become a staple in everyday cooking. She is a certified koji trainer and an accredited miso sommelier.

This comprehensive workshop is about 2 to 2.5 hours long and will begin with a presentation covering the basics of miso, including its cultural and historical background, classification, fermentation process, and its growing role as a global ingredient. You will also have the opportunity to taste a variety of miso types.

This is followed by a hands-on miso-making session, where you will learn to prepare your own batch (approximately 600g of miso) to take home.

There will be guidance on how to care for miso during its fermentation process, plus Haruko will offer practical recipes, including miso soup and miso dressing, to inspire you to bring miso into your daily cooking. Afterwards, you'll also gain free access to Haruko's online tutorial.

Includes: Glass jar for participants to take home their batch of miso, light refreshments and access to Haruko's online miso tutorial. Kits for future miso making will also be available to purchase from Haruko.
