While most sakes are meant to be drunk young and fresh, a few special examples are aged for years or even decades to transform into
something completely different - and even more delicious. Some get
matured in sub zero temperatures or buried in snowbanks, while others are aged at warmer temperature to create a vast array of new aromas and
flavours to savour. Styles range from dry & savoury to delectably
sweet, and can be enjoyed at a wide range of temperatures: chilled, on ice, room temperature or even warmed. You will experience all these service styles on the night to help find your favourite, paired
with a delectable range of artisanal cheese and some special Christmas sweet treats.
Filled with the flavours of toasted nuts, dried fruit, chocolate, coffee, mushrooms and spices, aged sake is the perfect drink to pair with your cheeseboard, as well as your dessert course (think mince pies and Christmas pudding) - or just to savour on its own while sitting in front of a warm fire.
The volume of aged sake on the market is tiny, and these rare bottles
are something very special indeed. Our sake educator Sake Sarah Stewart has assembled an eye-popping selection (some only available in Japan!) of 6 aged sake paired with cheese and festive food pairings for lucky guests to experience this holiday season: including a vintage sake that is over 25 years old!
About the Instructor and School:
Dr. Sarah Stewart is a WSET Certified Sake Educator and teaches sake, wine and cheese courses at West London Wine School, alongside serving on the British Sake Association’s organizing Committee. She is also one of only four instructors globally able to teach the advanced Sake Scholar qualification on sake regionality.
